BOO Modern Coffee Co. Wins World Coffee Roasting Championship 2026 in Brussels

Belgium’s BOO Modern Coffee Co. won the 2026 World Coffee Roasting Championship on June 27 in Brussels, with co-founder Benjamin Brassart taking the title to become Belgium’s first world coffee roasting champion.

The Coffee

BOO Modern Coffee Co. is a specialty roastery founded in 2024 in Anderlecht, Brussels by Benjamin Brassart and his co-founder Benoit. The two Bs give the roastery its name. In the two years since opening, BOO has developed a lineup of specialty coffees sourced from committed producers across origins, offered as single origins and blends for espresso and filter.

The World Coffee Roasting Championship supplies all competitors with identical standardized green lots, so the coffees Brassart roasted in Brussels were not BOO’s own sourced product. His commercial range is where you find his sourcing and roasting philosophy applied to coffees he has chosen and developed himself.

The Win

The World Coffee Roasting Championship (WCRC) is the most prestigious roasting competition in specialty coffee, organized by the World Coffee Championships (WCC) and held each June alongside the World of Coffee trade show. Competitors are the national roasting champion from each participating country, evaluated across three live stages: roasting a single origin coffee to a target roast profile, roasting and blending a supplied lot, and demonstrating sensory evaluation skills before a panel of certified judges. Because all competitors work with the same supplied coffees, the result measures pure roasting judgment.

Brassart earned his place in Brussels after winning Belgium’s inaugural national coffee roasting championship in 2025, making him the country’s first-ever national roasting champion.
